The name “Brewery Thirty-Three” amalgamates the number 33 appearing throughout Tommy’s life. He wore the number 33 on his soccer and hockey jerseys when he was growing up, and it ultimately became the badge number assigned to him in the fire department.
Tommy Cimino, Jr. – Brewmaster
Tommy’s background in the beer industry is unique for sure. Before brewing craft beer, he served as a firefighter/EMT-paramedic. A 1989 graduate of Cinnaminson High School, Tommy’s emergency services career started in the summer of 1989 as a volunteer firefighter with the Cinnaminson (NJ) Fire Department. In 1993, he transitioned into a full-time position and spent ten years serving the community he grew up in before transferring to the Mount Laurel (NJ) Fire Department in 2003. Additionally, Tommy worked for Virtua Hospital’s Mobile Intensive Care Unit in Camden City, NJ, and surrounding communities. In 2015, he retired from emergency services after 26 years of active duty.
Tommy’s love for craft beer started long before he started brewing it. The craft beer industry had just begun to explode in that many small breweries were starting to make a splash in the industry. New flavors and styles were tantalizing taste buds and transforming beer as we knew it, and home brewers were at the center of it. He started homebrewing on his own, with friends and colleagues, and found a new passion. In July of 2017, he took a chance and applied for an assistant brewer’s position at a local brewery. Having only homebrewing experience and never operating on a commercial-sized brewing system, Geoff and Lori at Zed’s Beer – Bado Brewing took a chance and brought Tommy onto their team. Since then, he has helped brew world-class craft beer at Zed’s, some of which have earned accolades with gold, silver, and bronze medal finishes in national competitions. This experience has been invaluable in that it’s built the foundation needed to go out and open his brewery.
Lisa Cimino – Vice President/Taproom Manager
Lisa Cimino (DiGiulio) hails from the Jersey shore, growing up with her toes in the sands of Long Beach Island, NJ. She graduated with a Bachelor’s Degree from Loyola University (MD) and recently graduated with a Master’s Degree in Health Leadership from Western Governors University. She currently holds the Director of Business Development role at Kessler Institute for Rehabilitation in Marlton.
Lisa is given full credit for exposing Tommy on his poor choice of beer the night they first met…Tommy was guzzling a “light” beer while she sipped on a dry stout. She very quickly converted his tastes to a broader spectrum of beer styles. Nearly 25 years later, their partnership has evolved into entrepreneurship as together they build the brand Brewery Thirty-Three. With Lisa’s management skills, she will be an essential asset to the brewery taproom operations and customer service. Lisa is very excited to greet every single person who visits Brewery Thirty-Three.
